Healthy, Classic Egg Salad

In my pregger state I have been looking for yummy protein recipes that leaving me feeling energized and full. But I also need to make sure they're healthy. So, here is what I have come up with:


Healthy, Classic Egg Salad Sandwiches

6 eggs
4 TBSP yogurt (plain or vanilla--I used vanilla)
2 TBSP mayo
2 tsp fresh lemon juice
1 tsp dijon mustard
1 roma tomato, seeded and diced
1/2 a cucumber, peeled and diced
2+ TBSP red onion
2-4 tsp dill (depends on your taste preferences)
salt and pepper to taste

Place your eggs in a pan, cover with water, and bring to a boil. Then remove from heat, cover, and let stand for 10 minutes. Rinse in cold water, peel and dice. Meanwhile, mix the yogurt, mayo, lemon juice and mustard. Fold in the tomato, cucumber, onion and eggs. Season with dill, salt and pepper. I always love my egg salad served between two pieces of toast. YUM!

Servings: enough for 5-6 sandwiches
